Top grill recipes to make Father’s Day unforgettable

Show me a Kenyan father who does not appreciate a good grill, and well, I will give you my seat at my favourite barbecue restaurant. The point is, I love barbecue and I would be loath to give up my seat.

But I know Kenyan dads love meat just as much as they love a good dad joke.

In fact, fathers world over love bad jokes and good grills so much that I’m convinced that there is a special school they go to for induction into this pseudo-same world of fatherhood.  

So this Father’s Day, we have curated a three-list deep of grills that you can wow your father with.

You might be a disappointment in his eyes, but this might be the redeeming touch you need.

Though we cannot promise to mend your shaky relationship with a few ribs, however mouth-watering, we can promise to give it a good try and give you a good shot at being a favourite.

Even if it’s just for a day. Because you need it.

So fire up that grill, if you don’t have one, then get a grilling pan, get your father’s favourite cut, and then cut to the chase and start grilling.

It is the least you can do for that awesome man you call father, or dad, or baba, or whatever you call him. He deserves a good treat this Father’s Day.

And maybe make it a monthly thing, not a once-a-year grill, right?

But don’t forget to make sides to go with the grills, might be baked potatoes, fries, mashed potatoes or even rice. You know what he likes, so wow him.

Tender Chicken Recipe

Ingredients

• Boneless, skinless chicken breasts

• Barbecue sauce

• Onion powder

• Black pepper

• Paprika

• Olive Oil

• Salt

• Cilantro

• Limes

Method

1. Make the marinade with onion powder, black pepper, olive oil, salt and paprika. Rub it on the chicken and refrigerate for 45 minutes.

2. Preheat the grill to medium heat. Spray the grill rack with some oil spray.

3. Grill the chicken until fully cooked, about 7-8 minutes on each side

4. Brush the chicken breast with barbecue sauce during the last couple of minutes of cooking.

5. Serve with a squirt of lime juice and some cilantro

Rib-Smacking Goodness Recipe

Ingredients

• Ribs

• Brown sugar

• Paprika

• Cayenne pepper

• Barbecue sauce

Method

1. Preheat the oven, pat the rack of ribs dry with a paper towel and remove the membrane.

2. In a small bowl, mix together the homemade spice rub, which will have the sugar, paprika, pepper and some barbecue sauce.

3. Wrap the pork ribs tightly in foil and pop them into the oven. Broil them for 30 minutes, then brush them up with some more sauce.

4. Broil them for another 15 minutes to caramelise the sauce and give them a beautiful glaze.

5. Serve Grilled Beef Recipe

Ingredients

• Your dad’s favourite cut, be it rib-eye, sirloin or T-bone steaks

• 1 teaspoon salt

• ¼ teaspoon pepper

Method

1. Prepare the coals or a gas grill for direct heat. Heat to medium heat.

2. Cut the outer edge of fat on steaks (except tenderloin steaks) diagonally at 1-inch intervals with a sharp knife. Do not cut into the meat because it will allow the juices to cook out, and the beef will become dry.

3. Place the beef on the grill rack over medium heat. Cover the grill; cook 6 to 8 minutes for rib-eye, 1O minutes for T-bone or 13 to 15 minutes for sirloin and tenderloin, turning beef once halfway through cooking. Keep cooking to your liking, whether medium rare or completely well done. Sprinkle with salt and pepper.

4. Serve with your favourite sides.
